Vegan Puff Pastry Pizza
Best Recipes, is an Australian recipe website that I’ve long been a fan, offered me the chance to try out Pampas pastry, which has 64 flakey layers in one pastry sheet. I tried making these Puff Pastry Pizzas, that took only 15 minutes of prep time and 15 minutes of baking time in a preheated oven.
We need,
- Puff Pastry Sheets – 3
- Vegan Soy Cheese, grated or finely sliced to layer on top
- Olive Oil, to drizzle on top
- Flat Baking Trays (I used 2)
- Baking Paper, to line trays with.
Topping 1:
- Barbecue Sauce – 1 tablespoon
- Sliced Onions – 1 tablespoon
- Jalapeños, sliced – 5 to 6
- Mushrooms, sliced – 3 tablespoons
- Garlic Cloves, finely sliced – 2
- Mixed Dried Herbs – 1 teaspoon
Topping 2:
- Eggplant Purée – 1 tablespoon
- Garlic Paste – 1 teaspoon
- Nutritional Yeast – 1 tablespoon
- Black Pepper – 1 teaspoon
Topping 3:
- Tomato Paste – 1 tablespoon
- Sliced Onions – 1 tablespoon
- Bell Pepper, sliced – 1/4
- Mushrooms, sliced – 3 tablespoons
- Garlic Cloves, finely sliced – 2
- Mixed Dried Herbs – 1 teaspoon
Directions,
- Preheat the oven and layer the trays with baking paper.
- Roll out the puff pastry sheet and spread barbecue sauce/ eggplant purée/ tomato paste.
- Layer the veggies on top.
- Sprinkle dried herbs/ black pepper.
- Layer with vegan soy cheese.
- Drizzle with olive oil and bake in a hot oven at 200 degrees Celsius for 15 minutes or, until the edges of the puff pastry look golden brown.
Cool and slice. Tastes fabulous hot or cold. Makes a perfect meal, combined with soup 😊
