Vegan Pizza Scrolls

These luscious vegan pizza scrolls are full of homemade pizza sauce goodness with plant based cheese grated and melted into the rolls. Great for lunchboxes, snacking or a quick meal with soup. The recipe is good to make and take for picnics and potlucks. These pizza scrolls are delicious, quick, plant based, vegan, oil – free, free from nuts and made with whole grain flour.

We need for the Dough:

2 cups Strong Baking Flour (I used organic unbleached whole grain flour)

2/3 cup Water, lukewarm

1/2 pack of Instant Dried Yeast

2 tablespoons Maple Syrup

1/2 teaspoon Salt

Directions for the Dough:

Add the yeast, maple syrup and lukewarm water together and leave for 5 minutes.

Fold in the flour and salt to knead into a dough.

Add a spoonful of water if the dough isn’t sticking together in a ball.

Set aside to rise in a warm place for 20 – 30 minutes.

To make the Pizza Filling, mix together

  • 2 tablespoons of Tomato Paste
  • 1.5 tablespoons Barbecue Sauce
  • 1 tablespoon Ginger – Garlic Paste
  • 3/4 teaspoon mixed dried herbs – Basil, Rosemary, Oregano & Thyme

4 tablespoons grated vegan cheez, separately to sprinkle on top

Directions for the scrolls:

Roll the dough into a large rectangle and spread the  pizza filling all over.

Layer the cheez on and roll up tightly.

Cut into 1 inch wide rolls and place into a round baking pan.

Set aside in a warm place covered to rise for 30 – 40 minutes.

Bake at 175 degrees C for 30 – 40 minutes until golden brown and the cheez looks melted.

Taste great warm from the oven and keep well in an air tight box up to 2 days in the fridge.
