Vegan Organic Granola (Low Fat & Glutenfree)

This vegan Granola recipe is organic, nut-free, gluten-free (use certified gluten-free oats)  and is ready under half an hour. My foray into Make Your Own (MYO) breakfast mix started with this Muesli for quick weekday breakfast ideas. Predictably, I gravitated towards Granola for my next step! My quick Granola recipe uses coconut oil for added goodness, natural coconut water and Agave nectar along with a mix of seeds and fruits for the perfect breakfast. I was really curious to know what differentiated the two but couldn’t find much substantial evidence! Apparently the difference between Muesli and Granola, being that Granola is first soaked in an oil and sweetener mix with flavourings, and then baked. A slightly clumpy result is another point of difference. I baked the oat – coconut oil – agave syrup mixture before sprinkling in the fruits & nuts. Tastes best with chopped fresh fruits and non dairy yogurt

Vegan Organic Granola
A quick and tasty Granola full of fruits, nuts and spices.
Ingredients
  1. Rolled Oats - 2 cups
  2. Dried Coconut Pieces & Almond Flakes - 1/2 cup
  3. Mixed Fruits (Figs, Apricots, Sultanas & Cranberries) - 1/2 cup
  4. Coconut Water - 1/2 cup
  5. Organic Agave Syrup - 1/4 cup
  6. Coconut Oil - 1 tablespoon
  7. Dried Coconut Pieces & Almond Flakes - 1/2 cup
  8. Mixed Fruits (Figs, Apricots, Sultanas & Cranberries) - 1/2 cup
  9. Green Cardamom Seeds, powdered - 1 teaspoon
  10. Mixed Spice - 1 teaspoon

Instructions
  1. Preheat the oven to 180 degrees Celsius.
  2. Take a large mixing bowl and dump the oats, dried coconut pieces, nuts and fruits in.
  3. In a small bowl whisk the coconut oil, agave syrup, coconut water, cardamom and all spice powder well.
  4. Add the wet mixture to the mixing bowl and combine well.
  5. Spread carefully on a large baking tray lined with baking paper.
  6. Bake for 15 - 20 minutes until the Granola smells wonderful.
  7. Cool well without mixing, before storing in a tight lidded glass jar.
Notes
  1. *Use cinnamon powder and/ or, dry ginger powder in place of Cardamom powder and mixed spice powder.
  2. *Agave Syrup is stickier than Maple syrup and forms better clumps.
  3. *Do not stir the Granola once out of the oven or, the clumps break!
