2 Ingredient Watermelon Smoothie

Watermelon certainly makes the top of the list for my favourite fruits 🍉

Watermelons are well known for their cooling and hydrating properties due to high amounts of water content in the warmer weather. Other benefits include being low in calories, fat free, containing lycopene (also found the tomatoes), anti oxidants, Amino acids, Vitamins B and C and also, beta carotene (found in carrots). A serving size of a cup contains between 40 -50 calories making this great for snacks while trying Intermittent Fasting, also called the 5:2 diet that I’ve been trying to follow while reducing processed food and oil.

On hot summer days there’s nothing better than an iced watermelon smoothie. Now this recipe is made with just ice and ripe watermelon pulp. You can customise this smoothie to any occasion by adding a pinch of black salt, a squeeze of lime, some mint, fresh basil leaves, grated ginger or any other flavours you feel like.

We need,

5 cups of Watermelon, cut up
10 – 12 (1 cup) Ice Cubes

Directions,

Chop up the watermelon, remove any seeds and store in the fridge.

Crush ice in your blender to a coarse consistency.

Add the watermelon pieces and blend until smooth.

If using any flavour additions, i.e. ginger, salt, mint leaves or basil leaves, lime juice, etc. add this in and blend again to mix well.

Serve cold in tall glasses.

If wanting to make a slushies then increase the ice cubes to 2 cups and cubes and blend together.

Serve semi-frozen ❄️ before the slushies melt. This mixture can be stored in the freezer up to 2 days.
